Black Bean Sauce

  1. 2tbsp vegetable oil
  2. 1 180g tin black beans
  3. 4 cloves of garlic chopped
  4. 200ml vegetable stock
  5. 2tbsp dark soy sauce
  6. 4tbsp dry sherry
  7. 2tbsp sugar
  8. 2-3tbsp cornflour
    1. In a small pan heat the oil and add the beans and garlic, cook for about a minute.
    2. Mix together the remaining ingredients in a jug, then add to the pan.
    3. Bring to the boil stirring all the time, once thickened the sauce is ready
