Ingredients
- 1 cucumber, diced
- 2 large tomatoes, each cut into 8 wedges
- 1 small red onion, thinly sliced
- 1/2 green pepper, thinly sliced
- 70g whole, pitted olives
- 150g crumbled feta cheese
- 2 tablespoons dried oregano
- 2 teaspoons fresh lemon juice
- 2 tablespoons olive oil
- salt and pepper to taste
Method
- In a medium bowl, layer cucumbers, tomatoes, onion, pepper, Kalamata olives, and feta cheese. Sprinkle with oregano, then drizzle with lemon juice and olive oil. Season with salt and pepper to taste.
